Man oh man, here is my attempt at becoming accountable for sticking to a paleo lifestyle. I figure that if I have to post what I eat online for whoever in the world to see, that I might just stick to it
that much more (who knows if this will work).
Let me give you some background, in case you want to know:
I have followed a Paleo diet before. The time that I was doing so I felt
AMAZING. No, seriously, amazing. I was never tired during the day, at least not in a "I feel lazy and sluggish" way. If I did not get enough sleep, that of course was a different tired that had nothing to do with what I was eating. I was away at school when I decided to try Paleo out and instantly became hooked once I realized how much better my body was functioning. I was studying Kinesiology and in turn I had to take a ton of physical education classes, so my body had to be ready for very long days filled with physical activity from morning until evening. On top of that I would go to the gym or run through the campus vineyard and do stadium stairs until I was blue in the face (sprinting intervals of course, no slow long distance for this girl!). Every day I thought, "Why haven't I been eating this way all my life?" I became a huge fan of Sara Fragoso of
Everyday Paleo. She has fantastic recipes, tips, and was a big motivator of mine throughout the beginning of my Paleo journey. Although I have never spoken to or seen this lady in person, I have much respect for her and what she is doing for the Paleo community. Her cookbooks are also really helpful tools if you ever feel like you are stuck in a rut and need new ideas. Sara, if you're out there, THANK YOU! :)

Sounds like I was on the Paleo train for life, right? Wrong! In fact, that's a big fat
WRONG. Unfortunately when I moved back home from school (and I mean moved back home, like parents and sister, the whole shebang) I found it very very difficult to eat how I was when I was living on my own. Nobody in my house eats anywhere near Paleo and not one of them is even willing to give it a chance. Now, don't get me wrong, I do think that a Paleo lifestyle would benefit every single one of them in more ways than one, but I cannot force my grass-fed beef and mounds of veggies down their throats. Anywho.... Since I am not living on my own and share a teeny tiny fridge with three other people it has been very hard to not reach for things like bread, Nutella, or anything made of starchy delicious potatoes. Holy guacamole, there are always sweets in this house! I basically just gave up on living a Paleo lifestyle for about 6 months, but now I am back and this should be awesome....yeah, I think awesome works...who knows, it will probably be hell giving up the gluten and processed sugar again, but I know that it's all worth it in the end because hey, I've been there and done that before. So, AWESOME it is!
I am currently a personal trainer and get plenty of exercise daily so I am not doing this for any weight loss reason, I am simply doing this because I know how great I feel when I cut out processed foods, gluten, and sugar.
So this blog will be filled with pictures of my daily meals, forgive me now for the awful and non-creative quality of the pictures. I am hoping to become a better photographer with time, but until then regular snapshots will have to suffice. I will also be posting pictures of the changes and progress in my body. This could get a little uncomfortable for me so those pictures will probably be rare (that's understandable, right?). So here it goes, I guess, the first day back of my Paleo lifestyle.
Breakfast:
Sorry, I didn't know that I was doing this until lunch time today so I don't have breakfast on here. For breakfast today I ate two eggs scrambled with a slice of non-cured bacon. Yum, bacon :)
Lunch:
1 Grass-fed beef hamburger patty, sliced roma tomato, and steamed green beans.
Coconut milk, blueberry, spinach, and chia seed smoothie (I also added ice water to it so that it wasn't so thick from the full-fat coconut milk that I used). This smoothie is great, however, there is not a significant amount of protein in it so I wouldn't use it as a complete meal replacement. It could be good for a little energy boosting snack.
Snack:
I was at work so I didn't snap any pictures, but I had half of a banana, sugar snap peas, and nitrate-free sliced ham (deli meat).
I also had two of these little
Energy Balls that I made. Delighted Momma is another one of my favorites, she's great!
Dinner:
Grilled zucchini and grilled shrimp.
For the most part this was a good day, I know that I need to add more veggies in the mix. I'll work on it, I promise!
